I didn’t set out meaning to make caramel. I started off with pie and cheesecake, intending to create itty bitty layer pies. But I couldn’t think of a way to make the layers work, so I wound up just making tiny pies and tiny cheesecakes, and following the untried “mystery recipe” for pecan topping.
I also happened across some gluten free ginger snaps at Wegmans tonight, so the cupcakes that have crusts have entirely “safe” crusts (something I’ve been wanting to promise my coworkers for some time). I guess we’ll see tomorrow how it goes over.
